      Rasgulla Recipe

                       Now is there any Indian who doesn't like sweets, and if you are from West Bengal it will be a foolishness to ask this. Today I am sharing with you the most loved dessert by all, yes you are right the "Rasgulla". Its a delicious dessert and easy to be made at home. Now, lets go through it.  







Ingredients:




  • Milk: 2 cups
  • Water: 1 and 3/4 cup 
  • Sugar : 1 cup
  • Lemon Juice: 1 and half tbsp
  • A pinch of cardamom powder or A few drops of rose essence 



Method:

1. In a vessel, boil the milk. Add a tablespoon of lemon juice to it so that milk curdles.


2. Keep stirring until the whey completely separates.

3. Now strain the paneer in a cheese cloth. 


4. Wash the paneer with fresh water to wash away the sourness of the lemon. 

5. Bring the edges of the cloth up and tie it together. Squeeze the excess water and hang the cloth and leave it for 30 minutes. 


6. After 30 minutes, Knead it for 10 minutes. 
  
7. Divide the paneer dough into equal size small portions and shape each portion into a smooth round ball.


8. In a wide vessel, add the sugar and water and allow the sugar to melt. 

9. Now reduce the heat to medium flame and add the rasgullas carefully. 

10. Cover with a lid and cook for 10 -15 minutes. Open the lid occasionally. 

11. Then switch off the flame and let them cool completely. 


12. Now the most difficult part, keep it aside for 7-8 hours so that the sugar syrup gets into the dough nicely and becomes soft.

12. Refrigerate it and serve chilled. 


Bitter-less Bitter Gourd

                         I know many of us does not like bitter gourd, just because of its bitter taste. But its a rich source for vitamins which are essential for our body. Today I will Share with you a post through which we can make bitter gourd taste bitter less. Actually its too simple.



Ingredients :

  • Half Kg Bitter gourd.
  • Oil.
  • Salt as per your need.

Instructions :
  • Wash and cut bitter gourd as small slices, thinner it is crispier it will be.
  • Put oil in pan, and heat it.
  • Use some extra oil so that when bitter gourd put into the pan,should be half covered with oil.
  • All the bitterness will remain in oil, if you put less oil, it will taste bitter.
  • Fry it till it is reddish brown to deep brown in color.
  • Take out it from the pan and put salt as per your need.

Fish Masala

                            Sometimes the coastal foods will blow your mind away, its taste can't be compared. Today am going to share a post regarding how to make a fish masala at your home. It’s just Simple.



Ingredients :

  • King Fish/Sear Fish(Neimeen) - 500 gm
  • Small onions(Kunjulli) - 6 - 8 nos
  • Garlic pod - 1 no
  • Onions(chopped) - 3 nos
  • Red chilly powder - 2 tsp
  • Fenugreek(Uluva) - 4 - 5 nos
  • Garam masala powder - 1 tsp
  • Oil - As reqd

Instructions :

  •      Marinate the fish pieces with a pinch of turmeric, salt and red chilly powder.
  •          Heat oil in a pan or a kadai.
  •         Add small onions, garlic, ginger and green chilies and saute, till they turn brown. Keep it aside.
  •       Heat up the same pan.
  •       Add red chilly powder, coriander powder, pepper powder, fenugreek, garam masala powder and turmeric powder and fry, till the raw smell leaves.
  •      Grind both the mixtures together.
  •      Heat oil in a pan or a kadai.
  •      Add curry leaves and onions and saute, till the onions turn brown.
  •      Add the ground masala and mix well for a minute.
  •      Add tomatoes and salt and mix, till it becomes a paste.
  •      Add the tamarind pulp and fish pieces.If you prefer, fry the fish pieces lightly.
  •      Add the coriander leaves.
  •      Cover the pan and let it simmer, till the oil comes on top. It takes about 5 - 10 mins.
