Egg Puttu (Mutta Puttu)

If you are in Kerala you will be well known to the foods in breakfast consist of mainly rice items and one of my favorite among them is Puttu. It is a purely keralite dish with hundreds of variant. Its easy to make. Today I will be sharing with you all recipe of how to make Egg Puttu. It is really easy and delicious to eat. Later in my blog I will share various other variants of puttu.



 


Ingredients:
  • Rice Powder(Puttu Podi) - 2 cups
  • Grated Coconut - 1 cup
  • Salt
  • 4 Eggs
  • 2 large Onion
  • 1 Tomato
  • garlic chopped - 1/2 tbs
  • ginger chopped - 1/2 tbs
  • Coriander Powder - 1 tbs
  • Turmeric Powder - 1/2 tbs
  • Salt and Pepper as per need

Method:
  • First we will make egg masala and keep it aside.
  • Add oil in a pan, and keep it in medium flame.
  • Crack the eggs into a bowl and add salt and pepper, mix it well.
  • Add the mixture to the hot pan with oil and make a scrambled egg and move it to some other dish.
  • In the same pan add 2 tbs oil and chopped onions and a pinch of salt. Keep the flame to medium and let the onions get soft.
  • Add Chopped garlic and ginger and stir for few minutes.
  • Add turmeric, coriander and chilli powder, keep the flame low, mix well.
  • Add chopped tomato and salt as per need, stir well and add little water.
  • Make sure that its not too watery and not too dry.
  • Now add scrambled egg into it and mix well, cook for 2 min and remove it from flame
  • Now the Masala is ready, now we will prepare Puttu
  • Add little salt to puttu podi and mix well, slowly add water so that its just moist and doesn't form lumps.
  • Add half of the grated coconut and mix well.
  • Keep this mixture aside for 15 min.
  • Take the mold to make puttu. Add little grated coconut as first layer then then put little egg masala we prepared as second layer and then put the rice mix.
  • repeat the process till the desired layer is achieved.
  • Don't press the mixture it should be loosely packed in the mold.
  • cover it with lid, put some water in the puttu pot when steam starts to rise place the mold over it.
  • Cook it for 5-7 min.
  • Carefully transfer it into plate from the mold.
  • Serve Hot.
